I’m not super into really spicy foods so I usually like to mix some sweet with my spice. After making Raw Coconut Wraps I wanted a yummy dipping sauce that would go well with fresh veggies and the sweet flavor of the coconut wrap. I had some fresh mango and macadamia’s in the house so a creamy mango sauce with curry to spice it up was the plan.
Roberta’s Raw Mango Curry Dipping Sauce
Makes 2 C Serves 3-4
2 C fresh mango
1/3 C macadamia nuts
1 TBSP Indian Curry
1/2 TBSP Cumin
1/2 TBSP Turmeric
Variation: Add water to create a dressing for salads.
- Place all ingredients into the Vita-Mix container in the order listed and secure lid
- Select Variable 1
- Turn machine on and slowly increase speed to variable 7
- Blend for 1 minute or until desired consistency is reached. Serve immediately.
